Ingredients

4 oranges
1 red onion, finely sliced and pushed out into rings
60ml dry sherry
1/2 lemon, juiced
1 tablespoon olive oil
pinch freshly ground white pepper
lettuce leaves
8-10 black olives, pitted

Method

  1. Peel oranges, removing all white pith. Cut oranges into 5 mm slices. Place in a bowl with onion and sherry and marinate for 1 hour. Drain, reserving sherry marinade.
  2. Whisk lemon juice, oil, pepper and sherry marinade. Arrange lettuce in a serving dish. Place orange on top, then olives and onion. Add dressing and toss carefully.

Note

  • Use 2 small white onions if you cannot buy red onions.
