Ingredients

1 x 750 g slice middle cut rump steak, cut 4 cm thick
190ml dry red wine
60ml oil
1 onion, sliced
1 bay leaf, crumbled
4 stalks parsley
1/2 teaspoon dried tarragon or thyme
freshly ground black pepper
salt

Method

  1. Trim any fat from steak. Place in a rectangular glass or ceramic dish. Mix remaining ingredients, except salt, and pour over steak. Cover and leave to marinate in refrigerator for several hours, turning steak occasionally.
  2. Lift out steak and place on grill rack. Cook under a preheated hot grill for 3 minutes each side until sealed, then reduce heat to medium and cook until done to taste. Total cooking time: rare – 15 minutes; medium – 20–25 minutes; well-done – 30–35 minutes. Baste with marinade during cooking and turn steak with tongs so that juices will not escape. To serve, sprinkle with salt and carve in thin slices.
