This is one of the prettiest of all cakes. The mixture is divided into three colours, pink, white and chocolate, and marbled with a knife to make colour patterns which are seen when the cake is sliced.

Ingredients

Quantity Ingredient
125g butter
230g caster sugar
1 teaspoon natural vanilla extract
2 eggs, beaten
300g self-raising flour
1/2 teaspoon salt
190ml milk
2 tablespoons cocoa powder, (unsweetened)
2 tablespoons water, boiling
red food colouring

Method

  1. Cream butter with sugar and vanilla until light and fluffy. Gradually beat in eggs. Sift flour with salt and fold into creamed mixture alternating with milk. Divide mixture into 3 portions. Sift cocoa and dissolve in boiling water. Stir into one portion of cake mixture. To another portion add red food colouring to tint it pink. Leave third portion white.
  2. Drop mixtures by tablespoons into a well-greased, deep, 20 cm, round cake tin, alternating pink, white and chocolate. Run a knife through to marble mixture. Bake in a preheated moderate oven for 50–60 minutes. Turn out on a wire rack and, when cool, ice and decorate as desired.
