Ingredients

250g cooking apples, peeled and cored
125g blanched almonds, chopped
345g brown sugar
125g suet, shredded
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1 lemon, zested and juiced
125ml brandy or rum
250g currants
250g sultanas
250g raisins
250g mixed glace peel

Method

  1. Finely chop currants, sultanas, raisins, mixed peel and apples. Add nuts, sugar, suet, spices and lemon zest and juice and mix all ingredients thoroughly.
  2. Cover mincemeat and leave to stand for 2 days. Add brandy or rum, stir well and put into jars. Cover and allow to mature for at least 2 weeks before using.
