Beef patties with horseradish

Ingredients

1kg minced topside
salt and freshly ground black pepper
80g fresh breadcrumbs
60g butter, softened
3 tablespoons horseradish, grated
3 tablespoons chives, snipped
oil
parsley, chopped

Sauce

Quantity Ingredient
2 tablespoons lemon juice
250ml beef stock
125g sour cream
salt

Method

  1. Season meat with salt and pepper, and fork in breadcrumbs. Cream together butter, horseradish and chives and combine with meat. The mixture should be handled lightly; do not compact it too much. Shape into 6 generous patties.
  2. Heat a little oil in a heavy frying pan, just enough oil to grease the bottom, and cook patties over high heat for about 5 minutes on each side. The centres should still be pink, but the outsides well browned. Transfer to a heated platter and keep warm while sauce is being made.
  3. Put lemon juice and stock into frying pan and cook over high heat until reduced to about half. Remove pan from heat and stir in sour cream. Heat gently, stirring in any brown bits. Season with salt. Pour sauce over patties and sprinkle with chopped parsley. Serve with creamy mashed potatoes or buttered noodles.
