Ingredients

Quantity Ingredient
1 teaspoon powdered gelatine
2 teaspoons water, hot
1 tablespoon butter, softened
4 tablespoons caster sugar
1 teaspoon natural vanilla extract
375ml tinned evaporated milk, chilled
1/4 teaspoon salt
1 tablespoon lemon juice

Method

  1. Soften gelatine in hot water, then stir briskly over simmering water until thoroughly dissolved. Add butter and allow to melt. Stir in sugar and vanilla. Cool. Beat chilled evaporated milk with salt and lemon juice until thick. Gradually add cooled gelatine mixture, beating constantly. Pour into ice cream trays, cover and freeze.

Variations

  • Chocolate one-whip ice cream: Add 60 ml chocolate topping to gelatine mixture.

    Coffee walnut one-whip ice cream: Dissolve 3 teaspoons instant coffee powder in gelatine mixture. Fold in 30 g chopped walnuts before freezing.

    Fruit salad one-whip ice cream: Fold in juice 1 orange and 1 lemon, 2 sliced bananas, 150 g sliced strawberries and pulp 1 passionfruit before freezing. Use as soon as frozen or fruit will develop ice crystals.
