Baked mushrooms in cream

Serve this dish with grilled steak, or as part of a leisurely holiday brunch with hot rolls and slices of pan-fried ham.

Ingredients

Quantity Ingredient
500g mushrooms
60 butter, melted
freshly ground black pepper
60ml cream
3 tablespoons parmesan cheese, grated
salt
2 tablespoons chives, snipped
or 2 tablespoons spring onions, finely chopped

Method

  1. Trim mushroom stems level with caps. Arrange caps, stem side down, in a buttered shallow ovenproof dish and brush tops with the melted butter. Season well with salt and pepper, sprinkle with chives or spring onions, and pour cream over top.
  2. Bake in a preheated hot oven for 10 minutes. Scatter parmesan cheese over top and bake for 5 minutes more.
