Leek and potato scallop

Ingredients

Quantity Ingredient
30g butter
4 old potatoes, peeled and finely sliced
2 leeks, finely sliced, (white part only)
60g gruyere or cheddar cheese, grated
freshly ground black pepper
salt
190ml milk
190ml cream
nutmeg

Method

  1. Butter a shallow ovenproof dish and layer potatoes and leeks in it, dotting each layer with butter, sprinkling with half the cheese and seasoning lightly with salt, pepper and nutmeg.
  2. Scald milk and cream and pour over. Sprinkle remaining cheese on top. Bake in a preheated moderate oven for 1¼ hours or until potato is tender.
