A very pretty salad, with mounds of different coloured raw vegetables and bright garnishes.

Ingredients

Quantity Ingredient
1 lettuce
3 carrots, grated
2 kohlrabis, grated
1 large yellow swede turnip, grated
or 2 beetroots, grated
1/2 small, firm cabbage, finely shredded
freshly ground black pepper
ground cumin
salt
olive oil
black olives, to serve
red radishes, to serve
parsley, to serve
lemon wedges, to serve

Method

  1. Rinse and dry lettuce leaves and use to line a large platter. Arrange separate mounds of each vegetable on lettuce leaves.
  2. Sprinkle generously with olive oil, and season with salt, pepper and a sprinkle of cumin. Garnish platter decoratively with olives, radishes, parsley and lemon wedges.
