Minced beef is mixed with yoghurt and a special spice mix, baharat, and moulded onto skewers to make interesting kebabs. The finished kebabs are served in flat bread with salad vegetables.

Ingredients

Quantity Ingredient
500g best quality minced beef
1 small onion, grated
2 tablespoons plain yoghurt
2 teaspoons Baharat
1 teaspoon salt
1 garlic clove, crushed
1 tablespoon lemon juice
lebanese flat bread, to serve
Tabouleh, to serve
lettuce, shredded, to serve
or tomato, sliced, to serve

Method

  1. Place all ingredients (except serving ingredients) in a bowl and combine very thoroughly by hand, kneading until the mixture becomes smooth and compact. Divide into 8 portions, and mould each one around the top of a flat metal skewer (not a round one, or meat will slip) in a cigar shape.
  2. Barbecue close to hot coals or cook under a preheated grill for 6–8 minutes, turning to brown all sides. Slip inside pockets of Lebanese flat bread with tabouleh and shredded lettuce or sliced tomato. A little plain yoghurt spooned over makes a nice sauce.
