This dish is perfect for Sunday brunch. Serve with creamy scrambled eggs accompanied by hot bread rolls or hot buttered rice.

Ingredients

Quantity Ingredient
6 kippers, tinned or packaged
60g butter
1/2 lemon, juiced
few drops tabasco sauce
1/2 teaspoon worcestershire sauce, (optional)
parsley, chopped

Method

  1. Lightly butter a baking dish and arrange kippers in it. Dot with a little of the butter and bake in a preheated hot oven 200°C for about 15 minutes or until butter melts and fish is heated through.
  2. In a small saucepan combine remaining butter, lemon juice, Tabasco and Worcestershire sauce, if using. Pour over hot kippers and sprinkle with chopped parsley.
