An American breakfast favourite.

Ingredients

Quantity Ingredient
110g white self-raising flour
110g wholemeal self-raising flour
1 teaspoon salt
2 tablespoons sugar
2 eggs, separated
250ml milk
30g butter, melted

Method

  1. Sift flours with salt and sugar. Beat egg yolks with milk and melted butter. Whisk egg whites until they stand in peaks. Stir milk mixture into flour, then fold in egg whites.
  2. Grease and heat a griddle, hotplate or frying pan. Place tablespoonfuls of mixture on pan and cook for about 3 minutes on each side or until brown. Serve hot at breakfast with butter, maple syrup and grilled sausages or bacon.

Note

  • In the US, these griddle cakes are served in stacks, with butter melting in between. Allow about 4 to a stack.
