Ingredients

Quantity Ingredient
500g old potatoes, cooked, mashed and kept warm
60g butter
freshly ground black pepper
150g plain flour
butter, to serve
salt

Method

  1. Beat potatoes with butter. Season with salt and pepper, and work in enough flour to bind into a dough. Divide dough in half. Place on a floured surface and pat out into 2 rounds, about 1 cm thick. Cut each round into 8 triangles.
  2. Grease and heat a griddle, hotplate or frying pan and cook potato cakes for about 5 minutes on each side until brown. Split in 2 and spread with butter. For breakfast, serve very hot with sausages, bacon, grilled tomatoes or fried eggs.
