Sweet fritter batter

Use for fruit fritters.

Ingredients

Quantity Ingredient
2 eggs, separated
170ml milk
1 tablespoon butter, melted
150ml plain flour
1 tablespoon caster sugar

Method

  1. Beat together egg yolks, milk and melted butter. Sift flour and sugar into a bowl, make a well in centre and stir in egg mixture.
  2. Gradually work in flour, beating to a smooth batter. Allow to stand for several hours. Just before using, whisk egg whites until stiff and fold into batter.
