Ingredients

Quantity Ingredient
1 bunch curly endive, trimmed and crisped
1 red pepper, cored, seeded and sliced
2 small onions, finely sliced into rings
16 black olives, pitted
2 oranges, peeled and finely sliced into rounds

Dressing

Quantity Ingredient
60ml olive oil
1 tablespoon white wine vinegar
1 garlic clove, crushed
1/2 teaspoon salt
1/4 teaspoon sugar
fresh or dried tarragon

Method

  1. Mix all salad ingredients together in a salad bowl. Combine ingredients for dressing in a screwtop jar, shake well and pour over salad just before serving.
