Ingredients

Quantity Ingredient
2 1/2 tablespoons short-grain rice
500ml milk
1kg cooking apples, cored and roughly chopped
55g caster sugar
1/2 lemon, zested and juiced
3-4 egg whites

Method

  1. Simmer rice in milk until tender and all the milk has been absorbed.
  2. Meanwhile, cook apples in as little water as possible, until soft. Sieve or purée in a blender, then stir in sugar, rice and lemon zest and juice. Whisk egg whites stiffly and fold lightly into the mixture.
  3. Put into a greased pudding basin, cover with greased baking paper and steam very gently for about 40 minutes. Serve with stirred custard made from the egg yolks.
