Ingredients

180g dates, pitted
125ml water
1 teaspoon lemon zest, grated
110g sugar, plus 2 tablespoons extra
1/2 lemon, juiced
225g self-raising flour
1/2 teaspoon cinnamon
125g butter
100g rolled oats
2 large cooking apples, peeled, cored and thinly sliced

Method

  1. Combine dates, water, lemon zest and 2 tablespoons sugar in a saucepan and cook for 2–3 minutes or until dates are soft. Remove from heat, add lemon juice and beat with a wooden spoon until smooth. Allow to cool.
  2. Sift flour and cinnamon into a bowl. Rub in butter and mix in remaining sugar and oats. Press about two-thirds of oat mixture into a greased and lined 19 cm square cake tin. Spread with date mixture. Arrange apple slices on top. Place remaining oat mixture on top of apples and press down. Bake in a preheated moderate oven for 45 minutes. Serve with cream or ice cream.
