500g rump or porterhouse beef steaks
3 tablespoons soy sauce
2 tablespoons chinese rice wine or dry sherry
2 garlic cloves, finely chopped
1 teaspoon fresh ginger, grated
3 tablespoons vegetable oil
2 onions, peeled and cut lengthways into eighths
1 bunch garlic or chinese chives, cut into short lengths
1/2 red chilli, seeded and sliced

Method

  1. Trim beef of fat and sinews and shred finely. In a bowl mix the beef shreds with soy sauce, wine, garlic and ginger, allowing about 30 minutes for seasonings to be absorbed.
  2. Heat the oil in a heavy-based frying pan or wok. Add the onions, tossing and stirring for about 2–3 minutes or until they soften. Keeping the heat high, add beef with seasonings, chives and chilli, and continue frying for 3 minutes longer, stirring and tossing all the while. Serve hot with steamed rice.
