125g butter
230g caster sugar
2 eggs
185g self-raising flour, sifted
pinch salt
raspberry jam
90g desiccated coconut

Method

  1. Cream butter with 115 g sugar until light and fluffy. Add 1 egg. Mix in flour and salt.
  2. Spread in a well-greased or lined 35 × 25 × 2 cm tin. Spread with raspberry jam. Beat remaining egg and sugar together, add coconut, and spread mixture over jam. Bake in a preheated moderate oven for about 20 minutes. When cold, cut into slices.
