Ingredients

Quantity Ingredient
125ml olive oil
1 lemon, juiced
1 tablespoon parsley, chopped
salt and freshly ground black pepper
1kg chicken wings, tips removed
150g plain flour
2 eggs, lightly beaten
oil, for deep-frying

Method

  1. Combine olive oil, lemon juice, parsley, salt and pepper. Add chicken wings, turning to coat thoroughly. Marinate, covered, for 1 hour at room temperature or overnight in refrigerator.
  2. Drain chicken and dredge with flour to give a light coating. Dip in beaten egg and deep-fry in hot oil for about 5 minutes or until tender and golden brown. Drain on crumpled paper towels and serve immediately.
