Ingredients

250g butter
2 large onions, very finely chopped
1 teaspoon dried thyme
1 teaspoon dried sage
1 1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper
20g parsley, chopped
105g celery, chopped
320g fresh breadcrumbs
500g chestnuts, cooked, shelled, skinned and chopped

Method

  1. Melt butter in a frying pan and add all ingredients except breadcrumbs and chestnuts. Cook for 5 minutes, then add crumbs and chestnuts. Cook, stirring until crumbs are crisp. Use as a stuffing for turkey.

Note

  • Tinned whole chestnuts may be used.
