Ingredients

Quantity Ingredient
260g plain flour
pinch salt
1 3/4 teaspoons baking powder
230g brown sugar
125g butter, softened, (or soft margarine)
2 eggs
125ml milk
1 teaspoon natural vanilla extract
90g walnuts, almonds or pecans, chopped
icing sugar, sifted

Method

  1. Sift flour, salt, baking powder and sugar into a bowl. Add butter, eggs, milk and vanilla and beat vigorously until well blended. Fold in nuts. Spoon into a greased and bottom-lined 23 × 33 cm cake tin. Bake cake in a preheated moderate oven for 30–35 minutes or until a skewer inserted in centre comes out clean. Cool on a wire rack, then dust with icing sugar. Cut into squares to serve.
