Wilted salad with bacon

Ingredients

Quantity Ingredient
4 tablespoons vinegar
1 1/2 teaspoons sugar
1 garlic clove, crushed
1/2 teaspoon freshly ground black pepper
6 rashers bacon, rind removed and cut into 2.5 cm strips
1 cos lettuce, rinsed and dried
2 large ripe tomatoes, each cut into 4 thick slices
3-4 spring onions, finely sliced

Method

  1. Mix vinegar, sugar, garlic and pepper in a small bowl. Let stand for at least 30 minutes. Fry bacon in a large pan until crisp. Remove pan from heat and add lettuce to hot bacon fat. Gently stir for a minute or until lettuce wilts a little. Add vinegar mixture and mix well. Arrange tomato slices on a large plate or individual salad plates, mound the lettuce on top and sprinkle the spring onions over.
