Warm bacon, avocado and lettuce salad

Ingredients

Quantity Ingredient
1 large lettuce, preferably a soft-leaved variety such as cos or mignonette
3 thick rashers bacon, rind removed
2 tomatoes, peeled, seeded and cut into wedges
2 large avocados, peeled, stoned and cut into chunks

Dressing

Quantity Ingredient
3 teaspoon wine vinegar
pinch salt
freshly ground black pepper
2 tablespoons olive oil

Method

  1. Rinse and dry lettuce, and crisp in refrigerator. Cut bacon into strips the size of a little finger. Line a bowl with lettuce leaves and add tomatoes.
  2. To make dressing, whisk ingredients together. Add avocado to dressing and toss to coat.
  3. Place in bowl. Toss bacon strips in a frying pan over high heat until lightly browned. Scatter over salad and serve at once.
