Ingredients

2 tablespoons oil
1 teaspoons black mustard seeds
1 teaspoon turmeric
1 teaspoon salt
2 tablespoons onion, chopped
500g green beans, trimmed and cut into 2 cm lengths
2-4 tablespoons water
45g desiccated coconut, (optional)

Method

  1. Heat oil in a large, heavy pan. Add mustard seeds, cover and allow to brown, but not to burn. Stir in turmeric and salt. Add onion and sauté until softened. Add green beans and water. Turn down the heat and cook until beans are tender, adding a little more water as needed. If you like, stir in coconut for a few minutes before beans finish cooking. Good with curries, or grilled or barbecued meats.
