Ingredients

250g butter, softened
440g sugar
3 eggs
1 teaspoon natural vanilla extract
125g dark chocolate, in pieces
150g plain flour, sifted
1/2 teaspoon salt
125g walnuts, almonds or pecans, chopped

Method

  1. Cream half the butter with sugar until light and fluffy. Add eggs, one at a time, and beat until light. Stir in vanilla. Place remaining butter and chocolate in a heatproof basin over hot water and stir until melted. Cool, then combine well with creamed butter and sugar mixture. Stir in flour, salt and nuts.
  2. Pour into a greased shallow cake tin about 32 × 23 cm. Bake in a preheated moderate oven for 45 minutes or until a skewer inserted in centre comes out clean. Allow brownie mixture to cool in the tin. Cut into small squares to serve.
