Ingredients

Quantity Ingredient
180g fresh bean sprouts
250g mushroom caps, finely sliced
1 large carrot, grated
6 spring onions, chopped
60ml olive oil or walnut oil
1 tablespoon wine vinegar
2 tablespoons light soy sauce
1 tablespoon sugar
1 garlic clove, crushed
1 teaspoon fresh ginger, finely chopped
2 tablespoons dry sherry

Method

  1. Place sprouts, mushrooms, carrot and onions in a bowl. Combine remaining ingredients and toss lightly with vegetables. Serve immediately.
