This refreshing drink, very popular in Victorian times, is enjoying a revival today. It keeps well in the refrigerator.

Ingredients

Quantity Ingredient
55g pearl barley
1 litre water
2 lemons, thinly zested and juiced
sugar, to taste

Method

  1. Place barley, water and lemon zest in a saucepan and bring to the boil. Lower heat and simmer as gently as possible, with lid on, for 2 hours. Strain into a container and add lemon juice and sugar to taste. Cool, then chill.
