Bananas baked with flavourings make a superb dessert. For a party, they can be flamed at the table.

Ingredients

Quantity Ingredient
8 firm bananas
55g brown sugar
125ml orange juice
1 orange, zested
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
125ml sherry
30g butter
4 tablespoon rum
30g desiccated coconut
vanilla ice cream, to serve
whipped cream, to serve

Method

  1. Peel bananas and arrange in a buttered shallow baking dish. Heat brown sugar, orange juice and rind, spices and sherry together. Pour over bananas and dot butter over top. Bake in a preheated moderately hot oven for 10–15 minutes or until soft, basting now and again. Transfer bananas and sauce to a serving dish. Heat rum, pour over bananas and set alight. Spoon sauce over bananas until flames die down. Sprinkle with coconut and serve with ice cream or whipped cream.
