Similar to guacamole but smoother and not so hot. Use with chicken or fish salads, or add to coleslaw.

Ingredients

Quantity Ingredient
1 large avocado, halved and stoned
3 tablespoons lime or lemon juice
1 tablespoon onion, finely chopped
1 garlic clove
1 teaspoon salt
freshly ground black pepper

Method

  1. Mash avocado to a soft purée. Add lime or lemon juice, onion and garlic which has been finely chopped or crushed with the salt and pepper. Blend ingredients well. Cover dressing. The avocado stone can be placed in the mixture – it is said this prevents the avocado from discolouring.
