This makes a lovely main course salad for 4 or a first course for 8.

Ingredients

Quantity Ingredient
2 avocados, peeled, stoned and sliced
125ml Vinaigrette dressing
4 rashers bacon, rind removed
crisp lettuce leaves
2 tomatoes, peeled and cut into wedges
8 black olives
fresh parsley, chopped, to garnish

Method

  1. Sprinkle avocado slices with a little of the vinaigrette. Cut each bacon rasher into 3 and pan-fry; drain on crumpled paper towels. Place lettuce leaves on 4 plates and arrange avocado slices on top and tomato wedges at one side. Strew bacon over avocado, add olives and drizzle with remaining vinaigrette. Sprinkle with plenty of chopped parsley.
