Aberdeen sausage

A Scottish favourite. Serve cold, with salads.

Ingredients

Quantity Ingredient
250g bacon, rind removed
500g minced topside
80g fresh breadcrumbs
2 teaspoons worcestershire sauce
1 tablespoon parsley, finely chopped
1 teaspoon salt
freshly ground black pepper
1/2 teaspoon nutmeg
1/2 lemon, zested
1 egg
plain flour, for dusting
fine, dry breadcrumbs

Method

  1. Mince bacon and combine with remaining ingredients except flour and dry breadcrumbs. Form into a roll about 8 cm wide and dust with flour. Tie securely in a scalded, floured cloth and plunge into a saucepan of boiling water. Boil steadily for 2 hours, replacing water if necessary. Unwrap while hot and roll in dry breadcrumbs. Place on a baking tray and dry in a preheated slow oven for 15 minutes.
