This luscious dessert of caramelised apples on a pastry crust appears on the menu of nearly every French restaurant. Golden delicious apples should be used for best results.

Pastry

Ingredients

150g plain flour
2 teaspoons caster sugar
90g butter, cut into small dice
1 egg yolk
1 tablespoons cold water

Filling

125g butter
295g caster sugar
10 large, ripe golden delicious apples, peeled, cored and thinly sliced
whipped cream, to serve (optional)

Method

  1. To make the pastry, sift the flour and sugar into a bowl, make a well in the centre and place the butter, egg yolk and water in the well. Mix quickly with a fork to form a dough.
  2. Alternatively, to make this pastry with an electric mixer, cream the sugar with the butter then incorporate the egg and water. Mix for a few seconds, then add the flour all at once. Do not beat any more once a dough is formed. Roll in plastic wrap and chill for 1 hour.
  3. To make the filling, put the butter and sugar in a 23 cm round flameproof dish. Allow the butter to melt on a gentle heat. Remove from the heat and arrange the apples, flat, in circles in the dish, packing them very tightly together. Return to the heat and cook gently until the butter and sugar form a pale caramel. This will take about 15 minutes. Do not allow the caramel to become dark.
  4. Preheat the oven to 190°C.
  5. While the apples are cooking, carefully roll out the pastry dough to a 28 cm round. Remove the dish from the heat and cover the apples with the dough round, pushing the edges inside the dish.
  6. Place the dish on a baking tray and bake for 45 minutes. If it begins to brown too much, cover it loosely with foil. Stand for 10 minutes before inverting the tart onto a heated dish. Serve warm, with lightly whipped cream if desired.

Note

  • To make this tart you need a heavy, round flameproof dish – a cast-iron frying pan with a screw-on handle is one idea, a small paella pan another. These are available at specialty kitchen shops. It is worth looking for a special pan for this famous dish.
