Ingredients

Quantity Ingredient
225g plain flour
1/2 teaspoon salt
2 teaspoons baking powder
110g caster sugar
1/2 cup walnut pieces
1 egg, beaten
1/2 cup milk

Method

  1. Preheat the oven to 180°C. Grease a 21 cm x 11 cm loaf tin.
  2. Sift the flour, salt and baking powder into a bowl. Add the sugar and walnuts, then stir in the egg and milk. Mix until smooth.
  3. Spoon into the prepared loaf tin and bake for 45 minutes or until a skewer inserted in the centre comes out clean.
  4. Cool on a wire rack. Serve sliced with butter, and cheese if desired.

Note

  • If you’re not keen on the bitter edge that walnuts sometimes have, they can be replaced with pecans, which are milder.
