This is a simple banana bread, heavy, moist and dark. Recipes such as this and Banana cake are an excellent way to use up overripe bananas.

Ingredients

Quantity Ingredient
3 ripe bananas, well mashed
2 eggs, well beaten
250g plain flour
165g caster sugar
1 teaspoon salt
1 teaspoon bicarbonate of soda
1/2 cup coarsely chopped walnuts

Method

  1. Preheat the oven to 180°C. Grease a 21 cm x 11 cm loaf tin.
  2. Mix the bananas and eggs together in a large bowl. Sift in the flour, sugar, salt and bicarbonate of soda. Mix in the walnuts. Spoon the batter into the prepared loaf tin and bake for 1 hour or until a skewer inserted in the centre comes out clean.
  3. Turn out onto a wire rack. Serve still warm or cooled, as you like, with butter.

Note

  • The walnuts can be omitted, or replaced with pecans if you prefer.
