Ingredients

Quantity Ingredient
185g dark chocolate, roughly chopped
1/4 cup dark rum
1/2 teaspoon vanilla essence
2 cups icing sugar, sifted
30g butter, softened
1 tablespoon hot milk

Method

  1. Melt the chocolate in a heatproof bowl set over simmering water. Stir in the rum and vanilla. Add the icing sugar, butter and milk. Stir vigorously over the hot water until the icing is smooth and glossy. If it is too thick, add a little more milk. Spread at once over the cake.
