This type of tea cake is made from a simple quick-mix batter, sometimes sprinkled with sugar and spices or other toppings, and often served sliced and buttered while still warm. Tea cakes are a comforting treat on a cold afternoon.

Ingredients

Quantity Ingredient
1 egg, separated
110g caster sugar
1/2 cup milk
1/2 teaspoon vanilla essence
30g butter, melted
150g self-raising, sifted
1 apple, peeled, cored and thinly sliced

Topping

Quantity Ingredient
1 tablespoon melted butter
1/2 teaspoon ground cinnamon, mixed with 1 tablespoon caster sugar

Method

  1. Preheat the oven to 190°C. Grease an 18 cm sandwich tin.
  2. Whisk the egg white until stiff and gradually beat in the sugar, then the egg yolk. Stir in the milk, vanilla and melted butter. Fold the flour carefully into the mixture.
  3. Spoon into the prepared tin and arrange the apple slices on top of the batter. Bake for 20–25 minutes.
  4. When cooked, turn out and place, top side up, onto a wire rack. While still hot, brush with melted butter and sprinkle with cinnamon and sugar. Serve warm or cold.
