This is a one-bowl or one-pan mix, depending how you want to make it. I melt the butter in a medium bowl in the microwave then mix in the sugar, vanilla, egg, flour and sultanas, or melt the butter in a large-enough saucepan before adding the remaining ingredients.

Ingredients

Quantity Ingredient
125g butter
2/3 cup brown sugar
1/2 teaspoon vanilla essence
1 egg, lightly beaten
1 3/4 cups self-raising flour
1 cup sultanas
1/3 cup flaked almonds

Method

  1. Preheat the oven to 180ºC. Line a 20 cm x 30 cm lamington tin with baking paper.
  2. Melt the butter, allow to cool, then stir in the sugar, vanilla and egg. Sift in the flour and stir into the butter mixture with the sultanas. When well mixed, spread evenly into the prepared cake tin.
  3. Sprinkle the almonds over evenly and press down lightly with the palm of your hand so they stick against the dough.
  4. Bake for 35 minutes or until lightly browned. Cool in the tin, then cut into bars.

Variations

  • Ginger slice

    Sift the flour with 1 tablespoon ground ginger and add 1/2–1 cup chopped glacé ginger in place of the sultanas.

    Date slice

    In place of the sultanas, add 250 g pitted dates which you’ve chopped using scissors
