Ingredients

Quantity Ingredient
200g self-raising flour
a pinch of salt
110g caster sugar
1 egg, lightly beaten
1 teaspoon vanilla essence
a few drops almond essence
125g butter, melted
135g desiccated coconut

Method

  1. Preheat the oven to 180°C. Grease baking trays or line them with baking paper.
  2. Sift the flour and salt into a bowl and stir in the sugar. Add the remaining ingredients, except the coconut, and combine. Form the mixture into small balls about the size of a large marble and roll in the coconut.
  3. Arrange on the prepared baking trays, spacing well apart. Bake for 15 minutes or until golden. Transfer to wire racks to cool. Store in an airtight container.
