Tofu steak

Ingredients

For the tofu steak

550g firm tofu
1 teaspoon sea salt
10g root ginger, finely grated
3 tablespoons cornflour
5 tablespoons cooking oil

For the wasabi dressing

Quantity Ingredient
2 tablespoons soy sauce
1/2 tablespoon wasabi paste
1 teaspoon grapeseed oil

Method

  1. Place a few layers of kitchen paper on a plate. Remove the tofu from the packet and put it on the kitchen paper. Leave for 20 minutes, to remove all the moisture. Cut into 3 cm squares and place in a bowl. Add the sea salt and ginger and sprinkle with the cornflour. Turn to coat on all sides.
  2. Heat a pan over a medium heat and add the cooking oil. Add the tofu to the pan and brown on all sides.
  3. Meanwhile, mix all the ingredients for the dressing in a small bowl. Mix the tofu steaks with the wasabi dressing and serve. Or divide into 8 portions, wrap and freeze separately. Use 1 portion for a bento box.

Spicy miso minced meat

Ingredients

3/4 tablespoon cooking oil
95g spring onion, finely chopped
15g root ginger, finely grated
15g garlic, finely chopped
265g minced pork or turkey
1 1/4 tablespoons caster sugar
1 3/4 tablespoons miso paste
3 tablespoons soy sauce
2 1/2 tablespoons sake
3/4 chicken stock cube
1 1/4 teaspoons tobanjan

Method

  1. Heat the oil in a frying pan over a low heat. Add the spring onion, ginger and garlic and stir well until softened.
  2. Add the minced meat, increase the heat to medium and cook until lightly brown. Add all the other ingredients except the tobanjan with 2 tablespoons of water, stir, and cook for 5 minutes, or until all the liquid has evaporated.
  3. Add the tobanjan (if using), and serve. Or divide into 4 portions, wrap and freeze separately. Use 1 portion for a bento box.

Mixed seaweed with okra

Ingredients

8 fingers okra
1/2 teaspoon salt
8 tablespoons mixed edible seaweed
4 tablespoons soy sauce
4 tablespoons lime juice

Method

  1. Add the okra and salt to boiling water for 1 minute. Drain, and chop finely. Put the seaweed in a bowl, cover with warm water and soak for 10 minutes. Drain and squeeze out the water.
  2. Mix the okra, seaweed, soy sauce and lime juice. Serve, or divide into 4 portions, wrap and freeze separately. Use 1 portion for a bento box.

White rice

Method

  1. Add 165 g cooked Japanese white rice to this bento box.

  • Tofu steak makes 8 bento box portions: 1,056 kcal in total; 132 kcal per serving.

    Spicy miso minced meat makes 4 bento box portions. With turkey: 536 kcal in total; with pork: 928 kcal in total; with turkey: 134 kcal per serving; with pork 232: per serving.

    Mixed seaweed with okra makes 4 bento box portions: 108 kcal in total; 27 kcal per serving.
