Pumpkin (winter squash) is one of Australia’s favourite vegetables, especially baked. It can also be barbecued, steamed or mashed. It’s much easier to purée than potatoes because you can use a food processor or hand-held blender.

Ingredients

Quantity Ingredient
300g pumpkin, peeled and cut into wedges
20g butter
salt, to taste
freshly ground black pepper, to taste

Method

  1. Steam or microwave the pumpkin until tender. Do not boil, as it will absorb too much water. Drain well.
  2. Process or blend the pumpkin with the butter until smooth. Season to taste with salt and pepper. Serve.
