Ingredients

Quantity Ingredient
2 lebanese cucumbers, chopped
1 large green capsicum, chopped
1 red onion, finely sliced
1/2 cup kalamata olives
150g feta, chopped
fresh oregano leaves or dried rigani

Dressing

Quantity Ingredient
1/4 cup extra-virgin olive oil
1 tablespoon red wine vinegar
1 lemon, juiced
salt and freshly ground black pepper
1 clove garlic, crushed, optional

Method

  1. Make a simple dressing by whisking together 1/4 cup extra-virgin olive oil with 1 tablespoon red wine vinegar or the juice of 1 lemon. Season well with salt and freshly ground black pepper, adding 1 clove of crushed garlic, if you like.
  2. Place 2 chopped Lebanese cucumbers, 1 chopped large green capsicum (pepper), 1 finely sliced red onion, ½ cup kalamata olives and 150 g chopped feta in a salad bowl. Drizzle with the dressing and add fresh oregano leaves or dried rigani, then gently toss and serve.
