Once you’ve cooked this fantastic stock, you’ll come to appreciate all that goes into the making of deceptively simple dishes like won ton noodles or pan mee. Not that it is in any way difficult; quite the opposite. Dried squid and dried flounder are common ingredients that you’ll find in Chinese grocers. They don’t so much give a fishy flavour as round everything out with an amazing savouriness that’s hard to describe. They also give the stock extra body. Pork hip bones are preferred here as they are a particularly good source of marrow, which adds even more flavour and body.

Ingredients

2 x 1.6kg whole chickens, quartered
8 pork hip bones
140g salt
1 dried flounder
2 dried squid
125ml fish sauce
220g sugar

Method

  1. Soak the chickens and pork bones in cold water with 2 tablespoons of the salt for 2 hours. Discard the water, then wash the chickens and bones under cold water and set aside. Chargrill the dried fish and squid over a low heat until browned. Remove and scrape off any burnt bits with a knife. Wrap the fish and squid up in muslin.
  2. Add the chickens and pork bones to a large saucepan and cover with 10 litres cold water. Place over a high heat and bring to the boil, skimming constantly. Once boiled, reduce the heat, continue to cook and occasionally skim for 1 hour. Add the muslin bag and reduce the heat further, until the water is barely rolling over. Cover with a lid and cook for 4 hours
  3. Once cooked, pass the stock through a double muslin sieve into another saucepan. Add the fish sauce, remaining salt and sugar, and return to a simmer, skim off any impurities, then allow to cool. Transfer the stock to smaller containers and store in the refrigerator for up to 3 days, or freeze until required.
