Anyone who’s been to Ireland will know how lovely soda bread is for breakfast when fresh from the oven. Don’t miss out the salt – this Lucy LT soda bread needs it.

Ingredients

Quantity Ingredient
200g wholemeal flour
250g plain white flour, plus extra for dusting
6g bicarbonate of soda
6g salt
6g caster sugar
5g lemon juice
350g milk, plus extra if needed

Method

  1. Preheat the oven to 220°C. Oil a 20 cm cake tin and dust with flour. Mix the 2 flours, bicarbonate of soda, salt and sugar in a bowl.
  2. Add the lemon juice to the milk and quickly mix into the dry ingredients. The dough should be wet.
  3. Working quickly, using floured hands, shape into a rough disc on a floured work surface and put into the tin, pressing into the corners.
  4. Bake for 25 minutes until risen and brown and the base sounds hollow when knocked. Cool slightly on a wire rack. Best eaten warm and keeps for a day.
