Ingredients

Quantity Ingredient
75g lucy bee coconut oil
50g honey
50g coconut sugar
40g gluten-free plain flour
40g ground almonds
3/4 teaspoon bicarbonate of soda
150g oats
1/2 teaspoon himalayan salt
1 egg, lightly beaten
175g raisins
75g dark chocolate, broken into small pieces, (at least 70% cocoa solids)

Method

  1. Preheat the oven to 180°C. Lightly grease a baking tray and line with baking parchment.
  2. Melt the coconut oil in a small saucepan over a low heat, then remove from the heat and mix in the honey and coconut sugar.
  3. In a separate bowl, combine the flour, ground almonds, bicarbonate of soda, oats and salt. Stir in the melted coconut oil, honey and sugar mixture, then add the egg and raisins and mix well. Stir in the chocolate and combine, using a wooden spoon.
  4. Spread the mixture onto the lined baking tray and level it out, to ensure even cooking. Bake for 12 minutes, then leave to cool completely before breaking into chunks.
