Ingredients

Quantity Ingredient
450g minced beef
1 cup finely grated carrot
1/2 cup finely grated zucchini
2 spring onions, halved lengthways and finely sliced
2 tablespoons finely chopped flat-leaf parsley
1 teaspoon thyme leaves
2 tablespoons tomato sauce
2 sheets frozen puff pastry, just thawed
1 egg, lightly beaten
2 tablespoons sesame seeds

Method

  1. Preheat the oven to 200°C. Line a large baking tray with baking paper.
  2. Put the minced beef in a large bowl. Using your hands, squeeze the grated carrot and zucchini to remove any excess moisture before adding to the mince. Mix together with the spring onion, herbs and tomato sauce until well combined.
  3. Cut each pastry sheet in half. Place the 4 pieces of pastry on a chopping board and place a quarter of the mixture in the centre of each, running lengthways. Lightly brush the pastry edges with water. Fold the pastry over the mince to form a roll and press the edges together. Turn the pastry over so the ‘seam’ side is facing down.
  4. Brush each roll with beaten egg, sprinkle with sesame seeds and cut into 6 pieces. Place on the baking tray and bake for 25 minutes or until the pastry is golden.
