Ingredients

Quantity Ingredient
1 small brown onion, finely diced
2 rashers free-range bacon, finely diced
1/2 cup pouring cream
1 egg
1/2 teaspoon dijon mustard
3 sheets frozen shortcrust pastry, just thawed
1/2 cup grated cheddar cheese
12 cherry tomatoes, cut into three slices

Method

  1. Preheat the oven to 180°C. Sauté the onion and bacon in a small frying pan over medium heat for 5 minutes or until the onion is soft, but not brown. Transfer to a plate to cool.
  2. In a small bowl, whisk together the cream, egg and mustard until well combined. Lay out the pastry on a chopping board. Cut out 36 rounds with a 5.5 cm pastry cutter. Gently press the rounds into three 12-hole mini non-stick muffin tins.
  3. Sprinkle the onion and bacon into the pastry cases followed by 1 teaspoon of the cream mixture. Sprinkle with cheese and top with a slice of cherry tomato (cut side up).
  4. Bake for 15 minutes or until golden and crisp. Leave in the tins for 5 minutes before turning out.
