Mini burgers with guacamole

Burgers are a bit of a Friday night tradition in my house. Made from scratch, there is no need to feel any guilt about serving these delicious chaps. In summer, you might like to cook the beef patties on the barbecue and eat outside. You can freeze any (uncooked) leftover beef patties and then simply defrost and cook as needed.

Quantity Ingredient
1 quantity Beef meatballs with roasted eggplant dip, meatballs only, uncooked
1 tablespoon olive oil
40g cheddar cheese, thinly sliced
16 mini multigrain bread rolls, halved
small lettuce leaves, to serve

Quantity Ingredient
1 ripe avocado, halved and stone removed
1/2 tomato, finely diced
1 tablespoon chives, finely snipped
1 tablespoon lemon juice

  1. To make the guacamole, scoop the avocado flesh into a large bowl and mash well. Gently stir through the remaining ingredients until combined. Refrigerate until ready to serve.
  2. Prepare the beef mixture following the instructions for the beef meatball recipe. Instead of rolling into balls, shape the mince into 16 even-sized patties.
  3. Preheat the oven grill to high.
  4. Heat the oil in a large frying pan over medium heat. Cook the beef patties for 4–5 minutes on each side, or until cooked through.
  5. Arrange the cheddar slices over the top of each beef patty. Place under the grill for 1 minute, or until the cheese melts.
  6. Toast the bread rolls. Place a lettuce leaf on the base of each roll, followed by a beef patty with cheese, then top with a spoonful of guacamole. Finish assembling the burgers by placing the top half of the rolls on top and serve immediately.

Baby’s serve

  • For a younger baby, wait until your baby is managing some finger foods (which may not happen until 8–9 months or older) before offering her some of the cooked beef patty with cheese and avocado or guacamole. Alternatively, you can mash the beef patty with avocado or guacamole. For an older baby, serve as for a younger baby or, if your baby is confidently managing finger food, serve as is, cut up as needed.

Toddler’s serve

  • Serve as is, cut up as needed.
