Slow-cooked beef ragu with penne

Made with steak instead of minced beef, this is the more delicious cousin of the basic bolognese. If you’ve got any leftover sauce, it’s perfect for freezing and using for another meal.

Ingredients

Quantity Ingredient
1 tablespoon olive oil
1kg chuck steak, cut into 3 cm cubes
2 brown onions, finely diced
2 celery stalks, diced
1 large carrot, diced
1 garlic clove, diced
800g tinned chopped tomatoes
or 1kg fresh tomatoes, chopped
3-4 thyme sprigs
penne, cooked, to serve
parmesan cheese, freshly grated, to serve (optional)
flat-leaf parsley, finely chopped, to serve

Method

  1. Heat half of the oil in a large saucepan over high heat. Add half of the steak and cook for 5 minutes, stirring occasionally, until browned all over. Transfer to a plate. Repeat with the remaining oil and beef and set aside.
  2. Add the onion, celery, carrot and garlic to the pan and cook for 5 minutes, or until the onion has softened. Return the beef to the pan, stir in the tomatoes, 250 ml water and the thyme sprigs, and bring to the boil. Reduce the heat to low, cover, and simmer for 1 ½ hours.
  3. Remove the lid from the pan and continue to simmer for a further 1 hour, or until the meat is tender and the sauce has thickened. Discard the thyme sprigs. Add the cooked pasta to the ragu and toss for 1 minute.
  4. Serve the beef ragu and penne with parmesan (if using) and parsley, to garnish.

Tip

  • If you’d like to include some more vegetable variety in this pasta sauce, add 155 g fresh or frozen peas during the final few minutes of cooking.

Baby’s serve

  • For a younger baby, blend the pasta sauce and stir through some smaller pasta shapes, such as pasta stars, or some quinoa or couscous. For an older baby, chop up the penne and stir through the sauce or serve as finger food.

Toddler’s serve

  • Serve as for an older baby.
