I buy a lovely good-quality apple and strawberry juice from my local supermarket to make these jellies. However, if you’re not able to source it, any other clear juice will work, such as apple and blackcurrant. Similarly, you can use other types of fresh fruit if you prefer (except for pineapple, kiwi fruit and papaya, because they contain enzymes which prevent jelly from setting).

Ingredients

750ml apple juice
750ml strawberry juice
1 tablespoon powdered gelatine
12 strawberries, hulled and sliced, plus extra to serve
cream, whipped, to serve (optional)

Method

  1. Place 125 ml of the juice in a bowl and microwave for about 45 seconds, or until hot. Sprinkle the gelatine into the hot juice and stir until dissolved. Add the remaining juice and stir well.
  2. One-quarter fill three large or eight small jelly moulds and refrigerate until just set – this may take up to a few hours. Keep the remaining juice mixture at room temperature so it doesn’t start setting.
  3. Add some of the sliced strawberries to the moulds over the already-set jelly and pour over a little more juice mixture. Return the moulds to the refrigerator until just set. Continue layering until the strawberries and jelly mixture is used up. Refrigerate until completely set.
  4. To serve, carefully turn each jelly from its mould and serve with whipped cream and extra fresh strawberries, if liked.

Tip

  • If you’re not fussed about layering the strawberries through the jelly, you can simply place the strawberries in the moulds and then fill the moulds with the jelly mixture.

Baby’s serve

  • There is no point blending these jellies because the texture will be lost, so wait until your child can manage larger pieces of fruit before offering them to her. You can cut up the strawberries into smaller pieces if you wish.

Toddler’s serve

  • Serve as is, cut into smaller pieces if needed.
